Pessac-Léognan

Golden color, brilliant and limpid; nose of beeswax, honey, peach and apricot; the palate is powerful with a nice fatty / acid balance, the spicy nose is confirmed on the palate with peppery aromas rare for a white wine; intense finish.
To taste with all grilled fish, dry goat cheese or Beaufort.

Terroir: Very deep gravel, sometimes on a clay-limestone subsoil.

Grape varieties: 80% Sauvignon, 20% Sémillon

Vinification: 7 to 10 days of fermentation in barrels.
Temperature control.
Maximum fermentation temperatures: 20-25 ° C max.
Aging in new barrels (30%) and one wine for 10 months.
Batonnage once a week, and at the end of the course every 15 days.
