Pessac-Léognan

Deep ruby ​​color; intense nose of red fruits (blackcurrant, blueberries, cherries) and gingerbread; on the palate, a spicy and liquorice wine with elegant and ripe tannins, very fine woody aromas, a smoky note on the finish; very good length.
A wine for aging.
To taste with any grilled or roasted meats, pear in wine and spices.

Terroir: Very deep gravel, sometimes on a clay-limestone subsoil.

Grape varieties: 54% Cabernet-Sauvignon and 46% Merlot

Vinification: 7 to 10 days of fermentation
3 to 4 weeks of maceration in tanks of 130 hl and 85 hl.
Temperature control.
Maximum fermentation temperatures: 26-28 ° C max.
Malolactic fermentation in vats.
Aging in new barrels (30%) and one wine for 12 months.
Light filtration before bottling.

The castle has retained the name of the old locality on which it was built.
A wine for long aging.
Average production: 60,000 bottles.
